Chocolate Peanut Butter Parfait

I saw this recipe over at Our Best Bites and had to share.
Chocolate and peanut butter are my favorite combination!

Chocolate PB Parfaits

1 small box sugar free chocolate pudding

1 C Cool Whip (I use light, or sugar free)

1-2 bananas

2 T reduced fat peanut butter

reduced fat Nilla Wafers

optional: unsweetened cocoa powder for dusting

Make pudding according to package directions. Take half the pudding and divide it into 4-6 bowls. (Makes 4 larger parfaits or 6 smaller ones, ramekins work perfect for portion control!) Slice bananas and place a single layer on top of pudding. Break up 4 Nilla Wafers on top of the bananas and then to with reamaining pudding.For the topping, whip together 2T peanut butter with 1/2 C cool whip. Fold in remaining 1/2 C until combined. It's normal to lose a lot of the volume of the cool whip. You can adjust as necessary. I like it very peanut buttery so I like this ratio, if you want it lighter, just reduce PB to 1T (you'll drop quite a few calories and fat that way too). Dust with unsweetened cocoa powder if desired.
