Pumpkin Chocolate Chip Muffins

Every year around Halloween my mom used to make these muffins. I have never made them, until last night. Yum!


Pumpkin Chocolate Chip Muffins
3 cups whole wheat flour (white will work fine too)
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/4 teaspoons nutmeg
1 1/4 teaspoons cinnamon
3 cups sugar
1/2 cup oil
4 eggs
2/3 cup water
2 cups canned pumpkin (you'll need more than 1 15oz can)
1 package semi-sweet chocolate chips
Mix liquids, then add the sugar. Add dry ingredients and mix until well blended. Stir in the chocolate chips by hand. Add to greased muffin tin, or muffin tin lined with paper cups. Bake 20-25 minutes at 350 until the edges are golden brown and the top springs back when touched.
Makes around 3 dozen.

I am going to try these. I was just about to search for a yummy pumpkin muffin recipe. They look so good.

Those look really good and seem easy to make. Plus pumpkin chocolate chip anything is Ryan's favorite. Now that I've seen how easy it is to make these, I feel guilty. I'm going to have to make some for him.

I love these!! I probably won't make any myself, but I should go to Mom's and I can help her make some. :) It's been way too long since I've had them!
