Shepherd's Pie Casserole


Now that fall is here I am no longer avoiding the oven, so casseroles are back on the menu. One thing I really love about casseroles is that there's less dishes to clean, and my kids will actually eat this one including the vegetables!!! And it's fast and easy, two things I love for everday meals.


Shepherd's Pie
1/4-1/2 pound of cooked ground beef
ketchup
1 can green beans
1 can corn
4-6 servings instant mashed potatoes
2 cups shredded cheese
Put the ground beef in the bottom of a casserole dish, mix with ketchup (to taste), and spread to cover the bottom of the pan. Drain the cans of beans and corn and spread them out over the beef mixture. Cover with mashed potatoes, and top with shredded cheese.
Bake at 350 for around 25 minutes.

My mom used to make Shepherd's pie all the time. It's the best comfort food to me. :)
